Sugar and spice and everything nice?
Sweetness is associated with pleasure, decadence, luxury, and celebration. But the history of sugar is anything but sweet - it is a history of colonised bodies, lands, and tastes. Today, sugar has a more recent history entangled with nutrition, health and disciplined bodies, lands and tastes. Guilt, pleasure, guilty pleasure. Clean, dirty, whole, fast, real, fake – countless trends and doctrines regarding diets busy themselves with sugar.
In this talk, Sasha discusses the histories and politics of sugar, with an emphasis on maple syrup - an indigenous ingredient that has been appropriated as Canada’s culinary ambassador.
